Cabernet Sauvignon 2023

The 2023 Cabernet Sauvignon fruit was hand-picked on 27^th March 2023. Fermented in open vessels and plunged three times a day until dry. Pressed and put into new and old French oak barrels for 18 months.

This wine is deep purple hue with notes of spice and dark forest fruits. Hints of chocolate mocha, good acid balance, oak on the nose integrated into the palate. A wine that will benefit from decanting. Displays a lovely fine palate and soft velvet tannin.  Finish is velvety and especially if the wine is left to breathe for several hours. This Cabernet will age for many years.
